We commence with the fail-safe choice of sparkler, the NV Bollinger Special Cuvée. The nose is well defined with forward, bready and slightly nutty. The palate has an irresistible fatness that those who like razor-sharp champagne might turn their nose up at, yet I enjoy its almost sensual texture and the lack of pretension.

Disgorged in May 2021, the latest rendition of Bollinger's NV Brut Special Cuvee is showing beautifully, offering up aromas of ripe orchard fruit, citrus oil and peach, mingled with hints of walnuts and freshly baked bread. Medium to full-bodied, fleshy and enveloping, with a generous core of fruit, lively acids and a pillowy mousse, it's seamless and complete, concluding with an expansive finish.

Bready and appley - upholds every tradition of champagne, including a good level of dosage that gives honeyed ripeness to the finish. Long, sweetly spiced finish, with yeastiness making it like a cinnamon bun. Delicious! (RH)
