We commence with the fail-safe choice of sparkler, the NV Bollinger Special Cuvee. The nose is well defined with forward, bready and slightly nutty. The palate has an irresistible fatness that those who like razor-sharp champagne might turn their nose up at, yet I enjoy its almost sensual texture and the lack of pretension.

Disgorged in May 2021, the latest rendition of Bollinger's NV Brut Special Cuvee is showing beautifully, offering up aromas of ripe orchard fruit, citrus oil and peach, mingled with hints of walnuts and freshly baked bread. Medium to full-bodied, fleshy and enveloping, with a generous core of fruit, lively acids and a pillowy mousse, it's seamless and complete, concluding with an expansive finish.

Full magnum bottle 3,200 g. 60% Pinot Noir, 25% Chardonnay and 15% Meunier. The reserve component includes wines that have been aged in magnums for more than 15 years in the Bollinger cellars. 85% of the grapes came from premier and grand cru sites on chalk soils. Primary fermentation in stainless-steel tanks, a portion of the wine was fermented in oak casks. Aged for 36 months in bottle prior to disgorgement. Winemaker Gilles Descotes. TA 4.5 g/l, pH 3.1, RS 10.8 g/l. Vegan and certified sustainable (HVE). Available in over 200 shops.Archetypal Bollinger! Evolved notes with a hint of caramelised butter and gently nutty character. Super-creamy on the palate, with a fine mousse and many layers of flavour. Very fine and elegant, despite the woody notes. Distinctive and memorable. (AWH)
