The NV (2016) Extra Brut Blanc de Blancs Les Pierrieres is bright, saline and intensely focused. Crushed rocks, lemon peel, white pepper, chalk, sage and mint all grace this weightless, ethereal Champagne. The 2016 is not an obvious wine, and it doesn t have the vinous intensity of Olivier Collin s wines, but it is striking in its beauty. Readers will find an especially savory, ethereal Champagne by Collin standards. This release spent 48 months on the lees.

Disgorged in March 2021 after 36 months sur lattes, Collin's NV Extra-Brut Blanc de Blancs Les Pierrieres (2017) is based on the 2017 vintage, complemented by fully 70% reserve wines. Wafting from the glass with aromas of citrus oil, crisp green orchard fruit, white flowers and wet stones that are framed by a deft patina from its elevage, it's a full-bodied, vinous Champagne with a satiny attack that segues into a deep, concentrated mid-palate. Chalky and incisive, it concludes with a long, saline finish. As ever, this cuveea which takes its name from the black flints that abound in the chalk in this areaa is worth a special effort to seek out.

Actually Les Pierrieres 2007 plus 30% reserve wine. Disgorged in 2011. Fantastic freshness due to the cool summer. It s a beautiful vintage. Not heavy with lots of nuances. (There was no Maillons in 2007 thanks to three hailstorms. Collin sold off the grapes.)Greenish gold. Fine and savoury. Rich and satisfying. Very fine mousse. This had some malo. Best for him is partial malo. If there s no malo, you have to increase SO2 and you have to age the wine for ages but we don t have the money for that. Quite chewy apple-skin quality. You have to like that quality
